3 fresh mint sprigs
2 tsp sugar
3 tbsp fresh lime juice
1 1/2 oz. light rum
club soda
In a tall glass, crush part of the mint with a fork to coat the inside. Add the sugar and lime juice and stir to mix. Top off with chilled club soda (or seltzer). Add a lime slice and the remaining mint, and serve.

Two cups pre made sweetened iced tea
One splash Roses lime juice
One cup vodka
Lime wedges or wheels for garnish
To a cocktail shaker, add ice and mint leaves. Close shaker and shake a few times to bruise mint leaves. Add remaining ingredients and shake to combine. Pour into ice tea glass and garnish with lime wedge or wheel.

A. 2/3 white to 1/3 red for luncheons and cocktail parties with little or no food. 50/50 for buffet situations and heavy hors d'oeuvre. 60/40 red to white for multi course sit down meals, depending on the menu.

A. Two glasses per person for a cocktail party, assuming that there is beer and mixed drinks available too.
